Strawberry Cheesecake Sheet Pan Pancakes
To brunch or not to brunch? Is that even a real questions, the answer is always yes to brunch! These sheet pan pancakes are next level. Not only are they super indulgent with the cheesecake bombs in the middle to the slice strawberries / whipped cream / strawberry shortcake crumb topping BUT they are made in the oven! That’s right, no more standing next to the stove to flip pancakes while everyone waits to get one. This easy recipe makes it a cinch to get pancakes on the table in 15 minutes! Brunch just got a whole lot better with this delicious sheet pan pancake!
This recipe is for a quarter sheet pan, but feel free to double the recipe to make a half sheet pan.
I also make homemade whipped cream by adding heavy whipping cream and a little powdered sugar together in a stand mixer.
If you have extra strawberry shortcake crumbs from this recipe, store them in an airtight container in the freezer!! These go great on ice cream and so many other treats!
Strawberry Cheesecake Sheet Pan Pancakes
Ingredients
Pancake mix of choice
1 pint strawberries, sliced
2 tbsp sugar
1/2 block cream cheese, softened
3 tbsp powdered sugar
1/2 tsp almond extract
1/2 tsp vanilla extract + 1/4 tsp
8 golden oreos
1/2 of 3 ounce package strawberry jello
2 tbsp butter, softened
whipped cream
Instructions
Preheat oven to 375 degrees. Mix sliced strawberries and sugar together, place in refrigerator. In a food processor pulse golden oreos until it’s a rough crumb. Add strawberry jello and pulse until just incorporated. Pour into a bowl and add softened butter. Blend butter into the mixture until it forms a crumb texture making the strawberry shortcake crumbs, set in freezer
In a medium size bowl make pancake mix according to package and add in almond extract and 1/2 tsp vanilla extract. For reference, I made the instruction amount on the back of pancake mix box and it said it would make 12 pancakes. Pour pancake batter into a well buttered quarter sheet baking pan and set aside
In a small bowl add cream cheese, powdered sugar, and 1/4 tsp vanilla extract. Mix together until well combined. Spoon small dollops of cream cheese mixture into the pancake batter all around. Place baking sheet into preheated oven and bake for 15 minutes
Top pancake with sliced strawberries, whipped cream, and strawberry shortcake crumbs
This citrus sangria is a crowd pleaser! It has a light and bright flavor from the citrus fruit that makes it so refreshing and tasty. It’s the perfect balance of tart from the grapefruit and a hint of sweet from the orange. Although citrus fruit is often found in summertime drinks, I always like to serve them during the winter holidays too! Especially since we could all use an extra dose of vitamin C during that time.
