Grilled Peach Burrata Salad
Last summer I had an amazing salad at a local restaurant here in Indianapolis, Root & Bone. They have a seasonal menu with a farm to table feel, so when I started to crave the salad again, I soon realized it wasn’t on their menu anymore. Cue the tears! But then I became resourceful and decided I was going to take matters into my own hands and create my own. I’m not going to lie, this salad has a couple components that are the same as Root & Bone’s, but the rest I was winging it and magic was made!! This grilled peach and burrata salad is so simple to make and I can almost guarantee it will become a staple on your table this summer.
Grilled Peaches: Use peaches that are just about ripe, but not fully ripened. This will give you a more “sturdy” peach when grilling and the texture is perfect for the salad - not too mushy!
Toasted Pecans: Toasting the pecans is essential. On a parchment lined baking sheet, add your pecans evenly so that they aren’t overlapping and toast them in a preheated oven at 350 degrees for 5 - 10 minutes. Making sure to continually check on them and turn, so that the pecans do not burn.
Burrata: Fresh mozzarella cheese filled with cream makes for the most delicious addition to the salad. It adds a creamy component that can’t be matched and pairs so well with the peaches and pecans.
Cherry Cheesecake Puff Pastry Tart
Ingredients
2 peaches, sliced
1/4 cup pecans, toasted & chopped (see above on how to toast pecans)
2 - 4 ounce burrata balls
4 ounce container of salad
Balsamic Vinaigrette, see below
Balsamic Vinaigrette
1/4 cup extra virgin olive oil
2 tbsp balsamic vinegar
1/2 tbsp spicy brown mustard
1 tsp onion salt
1/4 tsp garlic powder
1/4 tsp pepper
Instructions
On a medium heat grill, add peaches and grill for about 3 - 5 minutes per side. Remove from grill and put to the side
Add salad mix to bowl and toss with balsamic vinaigrette. Place grilled peaches on top and sprinkle toasted pecans. Split the burrata into a few pieces and add on top of salad. Drizzle with more balsamic vinaigrette and enjoy!
Balsamic Vinaigrette
Add all ingredients to a mason jar and shake well
Note: This recipe makes two salads, but feel free to make one large salad for the family to share!
These deviled eggs have the element of surprise by kickin’ it up a notch and frying them. The crispy fried exterior on the hard boiled egg goes so well with the creamy filling and bacon & chive topping!
