Classic Macaroni Salad

Make ahead Tip:

  • Can I make the macaroni salad ahead of time? Absolutely! Make sure to store macaroni salad in an airtight container in the refrigerator until ready to serve. If it seems a little dry from the macaroni absorbing the dressing, add a little more mayo until creamy. Macaroni salad will be good, if stored properly in the refrigerator for about 3-5 days


Classic Macaroni Salad

Ingredients

  • 8 ounces elbow macaroni, cooked according to package

  • 1/2 cup red bell pepper, diced

  • 1/2 cup celery, diced

  • 1/2 cup carrots, shredded

  • 1/4 cup onion, diced

  • 2 hard boiled eggs, diced

  • 1 cup mayo

  • 2 tbsp vinegar

  • 1 tbsp yellow mustard

  • 1 tsp sugar

  • 1 tsp salt

  • 1/2 tsp ground pepper

Instructions

  • Cook elbow macaroni according to package in salted water. Drain and mix all ingredients in a large bowl together until well combined. Store in an airtight container in the refrigerator until ready to serve
