Bacon Rosemary Scones with a Hot Honey Bacon Infused Drizzle
Who doesn’t love scones? Or bacon? So let’s mix them together and make the world a better place, one bacon scone at a time!
Growing up my mom was KNOWN for her scones! Hands down she makes the best scones and is always asked by family members to whip up a batch for breakfast. My Mom’s scone flavors were always in the sweet category though, she never made savory ones, so it was a really foreign concept for me to even accept a savory scone until I was forced to stretch my imagination and make a savory baked good for a baking show audition that Mer & I were recruited to audition for. I wanted to make a savory item that was not in my normal baking routine, but one that I would happily embrace to be in my everyday baking regiment! And so my love for the combination of bacon, hot honey, and rosemary took shape in the form of this deliciousness!! It has a hint of sweet with a little kick from the hot honey, saltiness from the bacon, and an earthiness from the rosemary. All wrapped up in a buttery, flaky, scone! I hope you enjoy these!

Ingredients
2 cups of Flour
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Dash of pepper
1 tbsp sugar
3 to 4 slices of cooked crispy bacon, crumbled
1 tsp fresh Rosemary, chopped
1/2 cup cold butter, grated
2/3 cup buttermilk
2 tbsp honey
hot sauce to taste
1 tsp bacon grease
Instructions:
Grate cold butter into a bowl and place in freezer
Combine 1st 6 ingredients in bowl and mix
Take butter out of freezer and gently mix butter into flour mixture
Add buttermilk, bacon and Rosemary until just moistened
Turn the dough on a lightly floured surface and I read 5 to 6 time (do not overwork)
Pat into an 8” circle, cut into wedges, and place about 1 inch apart on a parchment lined baking sheet
In a 425 degree preheated oven, bake scones for about 15 mins or until lightly browned
Mix together honey, bacon grease and hot sauce
Drizzle honey mixture over scones
