Cheeseburger Meatballs
Recently my family and I went on vacation to Florida to visit my parents. One of the snacks I packed were Cheez-Its, which I forgot how much I LOVE Cheez-Its! On the way home we ran into a lot of traffic, in which our drive became a 20 hour excursion and my husband drove straight through. Anyone else have a husband who likes to get to their destination with minimum stops?!! Well as the co-pilate I became very addicted to Cheez-Its, it’d been ages since I’d had them, and I kept dreaming about what I could make with them! Cheeseburgers were still on my mind from the 4th of July celebration and so these babies were born! These cheeseburger meatballs are the perfect game day appetizer and with football season coming up, I know you need these in your life!!!
What Makes these Cheeseburger Meatballs:
Ground Beef
Ketchup
Mustard
Relish
Salt & Pepper
Cheddar or Pepper Jack Cheese
Extra Cheesy Cheez-Its
Dipping Sauces: Ketchup, Mayo, Ranch, the options are endless
Cheeseburger Meatballs
*Makes about 16 meatballs
Ingredients
1 lb ground beef
1 tbsp ketchup
1 tbsp mustard
1 tbsp dill relish
Salt & Pepper, to taste
1 cup pepper jack or cheddar cheese cubes
2 cups Extra Cheesy Cheez-Its
2 eggs
Neutral oil for pan
Instructions
In a bowl mix ground beef, ketchup, mustard, relish, salt and pepper together. Grab about 1 - 2 tbsps of meat and roll it in your hands, then flatten out into a round disk shape. Place a cheese cube in the middle and wrap the meat around the cheese. Roll the meatball in hands until perfectly round and the cheese cube is covered. Repeat until all meatballs are formed
Crush Extra Cheesy Cheez-Its into crumbs and pour into a bowl. In another bowl add eggs and whisk them until the yolks are incorporated with the egg whites
Coat meatball in the eggs, remove, and then roll around in Cheez-Its until fully coated. Set aside. Continue until all meatballs are fully coated
Heat a skillet on medium heat and pour oil in the skillet until bottom is coated. Once hot, add in the meatballs and cook for about 3 to 5 minutes each side, about 15 minutes total. Once golden and fully cooked through, remove from skillet and serve right away with desired dipping sauces
These deviled eggs have the element of surprise by kickin’ it up a notch and frying them. The crispy fried exterior on the hard boiled egg goes so well with the creamy filling and bacon & chive topping!
