Berry Croissants
These semi-homemade strawberry and raspberry croissants are so chic and delicious, no one will realize you made them with shortcuts! The croissants are filled with a luscious cream that’s not overly sweet, then topped with the fresh berries and a light layer of powdered sugar. These make the perfect pastry to whip together for brunch, Valentine’s Day, baby showers, bridal showers - really any celebration or just to make any day feel more special!
Tips:
You can use any store bought croissants you’d like. I like to buy them at Costco since it’s such a great deal for a 12 pack at $5.99!
You can make the cream filling and slice the strawberries the day before. Then just fill the croissant with cream and berries before serving them.
If you’d like to mix up flavors, use chocolate pudding instead of french vanilla pudding for a berries and chocolate croissant!
Berry Croissants Ingredients
1 cup cold heavy whipping cream
1/3 powdered sugar, plus more for dusting
1 - 3.4 oz french vanilla instant pudding
2 cups cold milk
8 croissants
strawberries, sliced
raspberries
Instructions
In a stand mixer, add heavy whipping cream and 1/3 cup powdered sugar. Beat until whipped cream has formed and has firm peaks, set aside
In a medium size bowl add instant pudding mix and cold milk. Whisk together for 2-5 minutes or until it’s a pudding consistency. Gently fold the whipped creamy into the pudding, fully combining the two. Scope into a piping bag with piping tip
Cut a slit into the straight side of the croissants. Pipe cream into the croissants and press berries into the cream. Lightly dust with powdered sugar and serve
