Strawberry Plum Clafoutis with Orange Zest Whipped Cream

By the end of April, I always long for plum season! I absolutely love plums and all the yummy treats I can make with them. Around the end of April 2021, I had the same hankering for plum treats and ended up making this for a baking show that recruited Mer & I to audition on NBC. They asked that I create a sweet item and savory item for the producers and this strawberry plum clafoutis with orange zest whipped cream was born! Invite your friends over and make this clafoutis as a delicious breakfast with a cup of coffee. It’s super easy to make, so you can spend more time catching up and not attached to your stove. But the custard texture and fresh fruit will surely impress everyone!

Ingredients

  • 1 1/4 cups whole milk

  • 4 large eggs

  • 1/3 cup brown sugar

  • 1 1/2 tsp pure vanilla extract

  • 1/2 tsp pure almond extract

  • 1/2 cup all-purpose flour

  • Dash of salt

  • 8 strawberries, sliced

  • 3 plums, sliced

  • Powdered Sugar for dusting on top

  • Butter for greasing pie dish and sugar for dusting bottom and sides of dish

Whipped Cream

  • 1 cup of heavy whipping cream

  • 2 tbsps of powdered sugar

  • Zest from half an orange

Instructions

  1. Butter pie dish and sprinkle in sugar. Roll the dish around so the sugar sticks to the butter

  2. In a stand mixer or using a hand mixer, mix together the whole milk, eggs, brown sugar, vanilla extract, almond extract, flour and salt. Blend until there are no clumps

  3. Arrange strawberry and plum slices on the bottom of pan, pour batter over the fruit

  4. Bake for 30 minutes in a preheated oven at 375 degrees

  5. While the clafoutis is baking, add heavy whipping cream to mixer with whisk attachment

  6. Whisk on medium, add in zest and powdered sugar

  7. Whisk until you have whipped cream, don’t over whisk or you will get butter

  8. Top the clafoutis with orange zest whipped cream and powdered sugar
