Chinese Smashed Cucumber Salad

Cucumbers are packed with nutrients and have many health benefits from eating them and this smashed cucumber salad delivers a delicious way to eat them. Tossed in a garlic soy sauce dressing, you’ll be wanting seconds and thirds! One of my kids absolutely loves cucumbers and will eat them raw like a pickle, while my other kid won’t touch cucumbers. This salad however has changed that view and they both devour this dish.

TIPS:

Smash the cucumber longways with the blade of your knife. Be careful while doing this, so that you don’t cut yourself! Once the cucumber is slightly smashed, cut the cucumber into bite size pieces

You can prepare the dressing ahead of time, just store in an airtight container in the refrigerator until ready to use

This smashed cucumber salad can be made a day in advance and stored in the refrigerator

Chinese Smashed Cucumber Salad

Ingredients

  • 5 mini cucumbers

  • 2 garlic cloves, minced

  • 1 tsp soy sauce

  • 1 tsp black vinegar

  • 1 tsp sesame oil

  • 1/2 tsp honey

  • 1/8 tsp white pepper

  • 1 tsp sesame seeds

  • drizzle chili crunch / chili oil

Instructions

  • On a cutting board lightly smash the cucumbers with the blade of your knife. Cut the cucumbers into bite size pieces and place in a serving bowl or plate

  • Mix together garlic, soy sauce, black vinegar, sesame oil, honey, sesame seeds and white pepper. Pour over cucumbers and gently toss together to coat the cucumbers. Drizzle with chili crunch or chili oil and serve
