Peaches and Cream Stuffed French Toast

The most decadent breakfast / brunch for summer! French toast stuffed with a delicious and creamy peach filling, then topped with whipped cream and peaches, I don’t think it gets any better than this. It’s easy to make, but tastes like something you would order at a cool brunch spot. I have a feeling this will become the new top requested breakfast on the weekends, as it surely will impress anyone you make it for!

Layers of:

  • Sliced Brioche Bread: A soft, sweet, and light bread that works really great for french toast

  • Cream Cheese & Peach Filling: Cream cheese with peach jam, vanilla extract, and powdered sugar

  • Whipped Cream: You can use store bought whipped cream or make it! I make mine with a tsp of the peach jam for and extra layer of peach flavor

  • Fresh Peaches: The topping to this french toast

  • Optional: Powdered Sugar & Maple Syrup The finishing touch, but not necessary if you don’t want it

Peaches and Cream Stuffed French Toast

Ingredients

  • 1 loaf brioche bread, slices

  • 8 ounces cream cheese, softened

  • 3 tbsp peach jam

  • 1/4 cup powdered sugar, more for dusting the top when serving

  • 1 tsp pure vanilla extract

  • 3 eggs, room temperature

  • 1/4 cup + 1 tbsp heavy cream, divided

  • 1 tbsp brown sugar

  • Pinch of salt

  • 3 tbsp butter

  • 2 fresh peaches sliced

  • whipped cream

Instructions

  • In a bowl mix together cream cheese, peach jam, powdered sugar, 1 tbsp heavy cream, and vanilla

  • In another bowl whisk together eggs, 1/4 cup heavy cream, brown sugar, and pinch of salt. Grab a slice of brioche bread and add about 3 tbsp of filling. Place another slice of brioche bread on top, like you are making a sandwich, set aside. Continue to do this until all bread and filling is used up, you may have additional filling left. Dip the “sandwiches” into the egg mixture. Making sure to coat all sides of the bread in the mixture

  • Heat skillet on medium heat. Place butter in the bottom and once melted add in the french toast. Cook on all sides until golden brown. Serve with whipped cream and peaches on top! Optional: add maple syrup and a dusting of powdered sugar on top too
