Grilled Hawaiian Chicken
Grilling season is here and it’s time to fire up the grill! I absolutely love summer time and cookouts - there’s nothing better than smell of bbq, hanging out with family and enjoying the summer nights together outside. Hawaiian chicken is one of my favorite meals, it’s sweet, salty, saucy and just perfect in my opinion! This recipe uses simple ingredients that come together in a snap, just a couple steps from start to finish. It’s a delicious recipe that you’ll want to make all summer long!
In college, my best friend and I would order Hawaiian chicken in the food hall every time it was being served. It was our favorite meal freshman year and trying to recreate this recipe brings back so many memories for me! I hope you enjoy it as much as I do.
If you’re not into spicy, feel free to skip the jalapeños! But I will say, they don’t add a lot of spice, but more so give it a nice flavor!
Grilled Chopped Salad
Ingredients
2.5 lbs boneless chicken breast
1 cup pineapple juice
1/2 cup soy sauce
1/3 cup ketchup
1 tsp garlic, minced
1/2 tsp ginger, minced
5 slices of jalapeños
1/4 tsp pepper
1/8 tsp salt
Instructions
Add all the ingredients in a ziplock bag and marinate overnight in the refrigerator
Grill the chicken breast for 5 to 7 minutes on each side or until internal temperature reaches 165 degrees
In a small saucepan, add reserved marinade and cook on medium high heat until reduced and the consistency of a barbecue sauce
Glaze cooked chicken with sauce and enjoy!
