Fruity Rice Crispy Treats

Rice crispy treats just got a serious upgrade for spring with these fruity flavors! Made with a whole box of fruity crispy rice cereal - there’s beautiful pops of purple and orange in every bite, a whole bag of mini marshmallows, some butter, and sweetened condensed milk. Believe me, it’s so hard to eat just one! They’re a perfect treat to bring to an Easter gathering, over to a friend’s house for a sweet surprise, or a lunch box treat.

The secret ingredient in these amazing fruity rice crispy treats is SWEETENED CONDENSED MILK! Not only does it give an amazing flavor in every bite, but it also keeps them nice and gooey while maintaining a great crunch!

I like to keep 1 cup of marshmallows out of the butter / marshmallow mixture to mix in and top the treats with whole mini marshmallows. Not only does it look nice but it adds a soft texture to balance each crunchy bite!

Fruity Rice Crispy Treats

Ingredients

  • 1 - 11.5 ounce box of fruity crispy rice cereal

  • 6 tbsp butter, softened

  • 1 - 16 ounce bag of mini marshmallows

  • 1/3 cup sweetened condensed milk

Instructions

  • In a large bowl, pour in box of cereal and set aside

  • Add butter and all but 1 cup of the marshmallows to a large pot over medium heat. Continuously stirring until all the marshmallows and butter are melted together. Pour in sweetened condensed milk and stir until incorporated

  • Remove marshmallow mixture from heat and pour directly over cereal in the large bowl. Gently folding the mixture to coat the cereal. Add 3/4th cup of remaining marshmallows to the mixture and stir in. In a parchment lined 9x9 baking pan, spoon in the mixture. Using a clean measuring cup or a sheet of parchment paper, spray the bottom with cooking spray and lightly press down on top of the cereal treat to compact it into the pan. Top with remaining 1/4th cup of marshmallows

  • Let sit for at least an hour or set in refrigerator for 30 minutes before cutting. I like to cut the cereal treats and store them in an airtight container in the refrigerator to keep them slightly chilled
