Banana bread w/Cookie Butter & Chocolate Chips

This delicious and super, dare I say it…moist, banana bread is the perfect breakfast or snacking bread. Filled with lots of banana, cookie butter, and chocolate chips, your house will smell so divine as it bakes!

This recipe is my PoPo’s banana bread recipe, which is already amazing, but with the addition of cookie butter and chocolate chips. Que the choir, it’s so good! You can definitely use the original recipe for banana bread, just omit the cookie butter and chocolate chip steps. Or you could even amp it up with nuts - my PoPo used macadamia nuts. YUM!

popo’s Banana Bread with Cookie butter & Chocolate Chips

Ingredients

  • 1 cup sugar

  • 1 stick butter, softened

  • 2 eggs, room temperature

  • 3 very ripe bananas, mashed

  • 2 cups flour, sifted

  • 2 tsp baking poweder

  • 1/2 tsp baking soda

  • 1 tsp lemon juice

  • 3/4 cup semi sweet chocolate chips

  • 1/3 cup cookie butter

  • 1 tbsp turbinado sugar

Instructions

  • Preheat oven to 350 degrees. In a medium size bowl, beat sugar and butter until light and fluffy. Add one egg at a time and mix until incorporated. Add half of the mashed bananas and mix well

  • Sift all of the dry ingredients together and add into the wet ingredients. Beat for 2 minutes at medium speed. Add remaining bananas and lemon juice. Beat for 2 more minutes. Fold in chocolate chips

  • In a buttered / greased loaf pan, pour in banana bread batter. In microwave heat cookie butter in a small bowl for 15-20 seconds or until runny enough to drizzle. Drizzle cookie butter over banana bread batter and swirl into the batter until incorporated. Evenly sprinkle turbinado sugar over the top. Bake in over for 1 hour or until an inserted toothpick comes out clean
