Chocolate Chip Banana Streusel Muffins
These chocolate chip banana streusel muffins have been on repeat every week over here! My son requests them almost daily for breakfast and I don’t blame him, they’re just that good. With a moist banana muffin base, lots of chocolate chips sprinkled in, and a streusel oat mixture on top - I think they just might be on repeat in your household too!

Baking the muffins at 400 degrees for 5 minutes helps form the outside structure of the muffin, giving it maximum rise and the great dome shape we all love. Then finishing the cooking process at 350 helps bake the inside of the muffin without making the outside too brown and crispy
Can I bake and freeze the muffins? Yes! Bake the muffins and allow them to fully cool. Then flash freeze the muffins on a baking sheet in the freezer for a couple hours. Once they are slightly frozen, add them to a gallon size zip lock bag - removing all the air - and place back into the freezer. They will be good for up to 3 months in the freezer
Chocolate Chip Banana streusel Muffins
Ingredients
Muffins
2 cups flour
1/2 tsp baking soda
1 cup sugar
1/2 cup butter, softened
1 cup ripe banana, mashed
2 eggs, room temperature
1 tsp lemon juice
1 cup semi-sweet chocolate chips
Streusel Topping
1 cup flour
1/2 cup oats
1/4 cup brown sugar
2 tbsp sugar
2 tsp cinnamon
1 tsp pure vanilla extract
5 tbsp butter, softened
Instructions
In a small bowl sift together flour and baking soda, set aside
In a large bowl beat sugar and butter until light and fluffy, about 2 - 3 minutes. Add in one egg at a time, mixing well before adding the other egg. Pour in 1/2 of the mashed bananas and mix well
Slowly stir the dry ingredients into the wet mixture and mix until fully incorporated. Add remaining mashed bananas and lemon juice then mix until incorporated. Fold in chocolate chips and scoop batter into a greased or lined muffin pan, filling each muffin well about 3/4th of the way up. In a small bowl add the streusel ingredients together and mix well until a crumbly texture forms, I like to use my fingers for this to press & pinch the butter into the dry ingredients! Top the muffins with the streusel topping and bake in a 400 degree preheated oven for 5 minutes. Then turn the oven temperature down to 350 degrees and bake for 15 minutes or until a toothpick comes out clean and the top is slightly springy when lightly pressed
