Cheesy Chicken Broccoli Bake
This cheesy chicken broccoli bake is the perfect one pan meal! It’s an ideal weeknight dinner thats super easy to make and ultra comforting. The secret ingredient in this dish is mayo! I use the mayo to keep the chicken extra tender and it tastes so good when the cheese melts right over the top. Plus we can’t forget our veggie, broccoli!
I like to place the pan right on the table (over an oven mitt, of course) at dinner time and serve with a side of rice! It makes for an easy clean up and a true family style meal.
Cheesy Chicken Broccoli Bake
Ingredients
1.5 lb chicken breast, boneless skinless
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 cup Mayo
1 cup shredded cheese
2 - 3 cups broccoli, florets
2 tsp grated parmesan
Salt & Pepper to taste
Instructions
Preheat oven to 375. In an oiled cast iron skillet or 9x13 baking dish, add in chicken breast. Season with salt, pepper, garlic powder and onion powder. Spread mayo over each chicken breast and top with shredded cheese. Add in broccoli around the chicken and sprinkle grated parmesan over the top
Cover with foil and bake for 15 minutes. Remove foil and bake for another 10 minutes or until chicken is cooked through, reaching an internal temperature of 165 F, and cheesy is melted and golden. Remove from oven and serve right away
