Berry Crisp
This berry crisp is so easy to throw together, it’s one of those lazy desserts that seem like you did way more work than you did! It’s perfect for weeknights and also special enough to serve to guests after dinner or with coffee. It’s so comforting, filled with berries and topped with a buttery oat topping! Oh and served with ice cream is the absolute best!
Fresh or frozen fruit?! Either one works great, use whatever you have. When blueberries, blackberries, and raspberries are in season I love using fresh, but when they’re not or I don’t have access to fresh berries frozen works just as great!
Berry Crisp
Ingredients
4 cups berries such as blueberries, raspberries, and blackberries
1/3 cup sugar, if your berries are more tart add more sugar accordingly
1/2 tsp almond extract
2 tbsp cornstarch
squeeze of juice from half a lime
Crisp Topping
1/2 cup oats
1/2 cup flour
1/2 cup brown sugar
4 tbsp butter, room temperature
dash of cinnamon
pinch of salt
Instructions
Preheat oven to 350 degrees. In a greased baking dish, I use a 1.6 liter circle casserole dish, add the first 5 ingredients together. Mix well to coat the berries with the sugar and cornstarch
In a medium size bowl add all the crisp topping ingredients together. Pinching the soft butter into the dry ingredients to blend. Keep blending until a sand like texture is achieved. Evenly pour the crisp topping over the berry mixture and place in the oven. Bake for 40-45 minutes or until golden brown and bubbling. Let it cool for 20 minutes and serve with ice cream
